The journey of our cacao begins with the magnificent Theobroma cacao tree, a small evergreen tree native to tropical regions. Standing tall with its glossy, dark-green leaves, this tree bears large, football-shaped pods that hold the cacao beans. The pods, range in color from vibrant yellow to deep red. Cacao cultivation requires a delicate balance of climate and conditions. In select cocoa-growing regions, farmers carefully tend to the cacao trees, providing them with shade, proper irrigation, and nutrient-rich soil. The trees thrive in the tropical climates like our zones in Southern Mexico where they receive the ideal balance of rainfall, humidity, and temperature.
To develop the unique flavors of cacao, the beans undergo a fermentation process. Placed in shallow containers or wooden boxes, the beans are left to ferment for several days. During this time, naturally occurring yeasts and bacteria break down the pulp, releasing enzymes that transform the beans' flavors, developing the intricate taste profiles that make cacao so exceptional.
Following fermentation, the beans are spread out to dry under the tropical sun on mats or drying racks, allowing gentle air circulation to dry them slowly. This critical step requires patience and expertise to achieve the optimal moisture content in the beans, ensuring their quality and flavor.
Once dried, the cacao beans are carefully inspected and sorted, removing any imperfect ones. The selected beans are then ready to be transformed into delicious creations through processes like roasting, grinding, and conching.
