What characterizes raw honey? Raw honey is meticulously maintained below 120 degrees F, ensuring it remains well below pasteurization levels. Heating honey above 140 degrees F leads to the deactivation of its natural enzymes and a subsequent reduction in nutritional value. To prevent crystallization, many commercially available honeys undergo pasteurization or flash-pasteurization, albeit with the possibility of introducing minor impurities that accompany the honey from the hive during extraction.
When packaging honey for their customers, The Source Matters never subjects honey to temperatures higher than that found in the beehive, thereby preserving its raw characteristics.
In the event of honey crystallization, customers need not fret as this is a natural occurrence in raw honey. To restore the honey to its liquid state, they can simply portion out desired honey volume into a glass container and set that in a warm water bath (around 120 degrees F or less).
Honey is composed of four distinct types of sugars, with each type influencing the crystallization rate. Varieties with higher crystallization rates crystallize quickly, while others, like sweet clover, display less propensity for crystallization due to their specific sugar composition. Maintaining honey above 70 degrees F is recommended to minimize crystallization, particularly during colder months like Fall and Winter.
